Texas Caviar

Here it is! The recipe for the Texas Caviar that my aunt brought to our family cookout. This would be perfect for a 4th of July picnic!


Texas Caviar


  • 1 can black eyed peas
  • 1 can black beans
  • 1 can shoepeg corn
  • 1  6 oz jar jalape├▒os, chopped
  • 1  4 oz jar pimentos, chopped
  • 1 cup chopped celery
  • 1 medium red onion chopped
  • 1 cup olive oil
  • 1/2 cup apple cider vinegar
  • 3/4 cup sugar


  1. Drain first 5 ingredients and rinse well then place in a large bowl
  2. Add celery and red onion and mix the ingredients together 
  3. Pour the olive oil, vinegar and sugar in pan and heat the mixture until sugar is dissolved
  4. Pour over sugar over the bean mixture and toss to coat
  5. Marinate overnight in fridge
  6. Drain the liquid before serving with dipping Fritos
